The Burleigh Special
A 750g sourdough loaf made of 80% unbleached organic/sustainable wheat flour and 20% organic spelt, whole grain wheat, and whole grain rye.
Fermented for a minimum of 18 hours and has excellent keeping qualities. Can be stored in the fridge for 4-5 days.
Country Miche
A traditional French-style loaf made of 60% unbleached organic/sustainable wheat flour and 40% organic whole grain wheat, spelt purple wheat, and rye. Fermented for 36-48 hours and comes in four sizes.
Contains low FODMAPS and improved nutrient and mineral availability due to the breakdown of phytates.
Farmer's loaf
A crusty, soft inside loaf with 36 hours of fermentation and 20% spelt flour. It’s similar to a ciabatta and makes a great party loaf.
Willi's Rye
Two rye breads made of stone-ground whole grain flour, one with 50% whole wheat and 50% whole grain rye mixed with sprouted pepita and sunflower seeds, and one with 100% rye flour mixed with linseed meal and spiced with caraway seeds, aniseed, and coriander.
It can be stored for several weeks in the fridge, so it’s great for those that don’t eat bread too often.
Orchard loaf
A fruit and nut bread made with the Burleigh Special dough and ingredients such as walnuts, figs, raisins, and cranberries.
No sugar or spices are added and undergoes a long 18-hour fermentation.
Olive loaf
A savoury olive bread made with the Burleigh Special dough and pitted Kalamata olives.
Herbs and spices are kept out to optimize the olive flavour and undergo a long 18-hour fermentation.
Baguettine
It an artisanal bread made with sustainable wheat and spelt flour and a pre-fermented dough.
Hydrated using “bassinage” technique to obtain the “avéolage” with irregularly shaped holes.
Elvis Bun
A NY-style bagel-inspired bun fermented for 18 hours and made with natural sourdough leaven.
Has a chewy crust and soft inside, designed to hold all the juicy ingredients of a burger together.
